Kabab Torsh
Kabab Torsh is a delicious Persian dish made with marinated beef or lamb, cooked on skewers, and served with a tangy pomegranate-walnut sauce.
Ingredients - Serves 4
- Fresh parsley - 1/4 cup, chopped
- Walnuts - 1/2 cup, finely chopped
- Pomegranate molasses - 1/4 cup
- Salt and pepper - To taste
- Ground cinnamon - 1/2 teaspoon
- Ground turmeric - 1 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 large, grated
- Beef or lamb - 1.5 pounds, cut into cubes
Let's Get Started
- In a bowl, combine the grated onion, minced garlic, lemon juice, olive oil, turmeric, cinnamon, salt, and pepper to make the marinade.
- Add the beef or lamb cubes to the marinade and mix well to coat. Let it marinate for at least 2 hours, or overnight in the refrigerator.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated meat onto skewers, leaving a little space between each piece.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the meat is cooked to your desired doneness.
- Meanwhile, prepare the pomegranate-walnut sauce by combining the pomegranate molasses, finely chopped walnuts, and chopped parsley in a small bowl.
- Serve the grilled kabab torsh with the pomegranate-walnut sauce on the side.
