Joojeh Kebab
Joojeh kebab is a delicious Persian grilled chicken kebab marinated in a flavorful saffron and lemon marinade.
Ingredients - Serves 4
- Skewers - 4
- Cherry tomatoes - 8
- Bell peppers - 2, cut into chunks
- Onion - 1, cut into chunks
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Garlic - 3 cloves, minced
- Saffron threads - 1/2 teaspoon, dissolved in 1 tablespoon hot water
- Olive oil - 2 tablespoons
- Lemon juice - 1/4 cup
- Chicken breasts - 4, boneless and skinless
Let's Get Started
- In a bowl, combine the lemon juice, olive oil, saffron water, minced garlic, salt, and black pepper to make the marinade.
- Cut the chicken breasts into bite-sized pieces and add them to the marinade. Mix well to coat the chicken evenly. Marinate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken pieces onto skewers, alternating with chunks of onion, bell peppers, and cherry tomatoes.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Serve the Joojeh kebabs hot with rice or bread, and enjoy!
