Jerk Tempeh Wraps

Ingredients - Serves 4
- Avocado - 1, sliced
- Whole grain wraps - 4
- Spinach - 2 cups
- Red onion - 1, thinly sliced
- Red bell pepper - 1, thinly sliced
- Olive oil - 1 tablespoon
- Jerk seasoning - 2 tablespoons
- Tempeh - 8 ounces
Let's Get Started
- Slice the tempeh into thin strips and toss with the jerk seasoning.
- Heat the olive oil in a large skillet over medium heat.
- Add the tempeh to the skillet and cook until browned on all sides, about 5 minutes.
- Remove the tempeh from the skillet and set aside.
- In the same skillet, add the bell pepper and onion and cook until softened, about 5 minutes.
- To assemble the wraps, lay out the whole grain wraps and divide the spinach, tempeh, bell pepper, onion, and avocado evenly among them.
- Roll up the wraps, tucking in the sides as you go, and serve.
