Green Lentil Salad with Avocado
A healthy and hearty salad packed with green lentils, ripe avocados, and fresh vegetables.
Ingredients - Serves 4
- Fresh parsley - 1/4 cup, chopped
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Red onion - 1/2, finely chopped
- Cucumber - 1, diced
- Cherry tomatoes - 1 cup, halved
- Avocado - 1, diced
- Green lentils - 1 cup
Let's Get Started
- Rinse the lentils under cold water and drain.
- Place the lentils in a pot with 2 cups of water and bring to a boil. Reduce heat and simmer for 25-30 minutes, or until lentils are tender.
- While the lentils are cooking, prepare the other ingredients. Dice the avocado, halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.
- In a large bowl, combine the cooked lentils, avocado, cherry tomatoes, cucumber, and red onion.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Top the salad with chopped fresh parsley before serving.
