Green Lentil Salad with Avocado

Ingredients - Serves 4

Let's Get Started

  1. Rinse the lentils under cold water and drain.
  2. Place the lentils in a pot with 2 cups of water and bring to a boil. Reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  3. While the lentils are cooking, prepare the other ingredients. Dice the avocado, halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.
  4. In a large bowl, combine the cooked lentils, avocado, cherry tomatoes, cucumber, and red onion.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
  6. Pour the dressing over the salad and toss to combine.
  7. Top the salad with chopped fresh parsley before serving.
