Ingredients - Serves 4

Let's Get Started

  1. Cook the sweet potato glass noodles according to the package instructions. Drain and rinse with cold water. Set aside.
  2. In a bowl, combine the beef, soy sauce, sesame oil, sugar, and minced garlic. Mix well and let it marinate for 10 minutes.
  3. Heat vegetable oil in a large pan or wok over medium-high heat. Add the marinated beef and stir-fry until cooked through. Remove from the pan and set aside.
  4. In the same pan, add more vegetable oil if needed. Stir-fry the carrots, spinach, bell pepper, onion, and mushrooms until tender-crisp.
  5. Add the cooked glass noodles and the cooked beef back to the pan. Stir-fry for a few minutes until everything is well combined and heated through.
  6. Season with salt and black pepper to taste. Remove from heat.
  7. Garnish with chopped green onions and toasted sesame seeds.
  8. Serve hot and enjoy!
