Japchae
Japchae is a delicious Korean stir-fried noodle dish made with sweet potato glass noodles, vegetables, and marinated beef.
Ingredients - Serves 4
- Toasted sesame seeds - 1 tablespoon
- Black pepper - To taste
- Salt - To taste
- Green onions - 4, chopped
- Mushrooms - 4 ounces, sliced
- Onion - 1, thinly sliced
- Bell pepper - 1, thinly sliced
- Spinach - 2 cups
- Carrots - 1 large, julienned
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Sugar - 1 tablespoon
- Sesame oil - 2 tablespoons
- Soy sauce - 3 tablespoons
- Beef sirloin - 8 ounces, thinly sliced
- Sweet potato glass noodles - 8 ounces
Let's Get Started
- Cook the sweet potato glass noodles according to the package instructions. Drain and rinse with cold water. Set aside.
- In a bowl, combine the beef, soy sauce, sesame oil, sugar, and minced garlic. Mix well and let it marinate for 10 minutes.
- Heat vegetable oil in a large pan or wok over medium-high heat. Add the marinated beef and stir-fry until cooked through. Remove from the pan and set aside.
- In the same pan, add more vegetable oil if needed. Stir-fry the carrots, spinach, bell pepper, onion, and mushrooms until tender-crisp.
- Add the cooked glass noodles and the cooked beef back to the pan. Stir-fry for a few minutes until everything is well combined and heated through.
- Season with salt and black pepper to taste. Remove from heat.
- Garnish with chopped green onions and toasted sesame seeds.
- Serve hot and enjoy!
