Japanese Matsutake Soup
This traditional Japanese soup features the aromatic and flavorful matsutake mushrooms.
Ingredients - Serves 4
- Wakame seaweed - 1/4 cup, soaked and drained
- Tofu - 1/2 block, cubed
- Green onions - 2, thinly sliced
- Salt - To taste
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Water - 6 cups
- Dried matsutake mushrooms - 4 pieces
Let's Get Started
- Soak the dried matsutake mushrooms in warm water for 20 minutes, then drain and slice them.
- In a large pot, bring 6 cups of water to a boil.
- Add the sliced matsutake mushrooms to the boiling water and simmer for 10 minutes.
- Stir in the soy sauce, mirin, and salt to taste.
- Add the green onions, tofu, and soaked wakame seaweed to the pot.
- Simmer for another 5 minutes, or until the tofu is heated through.
- Serve the matsutake soup hot and enjoy!
