Irish Stew
A hearty and comforting Irish stew made with tender lamb, potatoes, carrots, and onions.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Salt and pepper - To taste
- Worcestershire sauce - 2 tablespoons
- Beef broth - 4 cups
- Bay leaves - 2
- Fresh thyme - 2 sprigs
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Carrots - 4 medium, peeled and sliced
- Potatoes - 4 large, peeled and diced
- Lamb shoulder - 2 pounds, cubed
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the lamb cubes and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the lamb back to the pot, along with the diced potatoes, sliced carrots, thyme sprigs, bay leaves, beef broth, Worcestershire sauce, salt, and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the lamb is tender and the flavors have melded together.
- Remove the thyme sprigs and bay leaves from the stew.
- Serve the Irish stew hot, garnished with fresh chopped parsley.
