Irish Stew

Ingredients - Serves 6

Let's Get Started

  1. In a large pot, heat some oil over medium heat.
  2. Add the lamb cubes and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
  4. Add the lamb back to the pot, along with the diced potatoes, sliced carrots, thyme sprigs, bay leaves, beef broth, Worcestershire sauce, salt, and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the lamb is tender and the flavors have melded together.
  6. Remove the thyme sprigs and bay leaves from the stew.
  7. Serve the Irish stew hot, garnished with fresh chopped parsley.
