IPA Beer Cheese Soup
A hearty and comforting soup made with IPA beer and sharp cheddar cheese.
Ingredients - Serves 6
- Chives - For garnish
- Salt and pepper - To taste
- Sharp cheddar cheese - 2 cups, shredded
- Heavy cream - 1 cup
- Chicken broth - 2 cups
- Ipa beer - 12 oz
- Flour - 1/4 cup
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Butter - 1/4 cup
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Stir in the flour and cook for another minute.
- Slowly whisk in the beer, followed by the chicken broth and heavy cream.
- Bring the mixture to a simmer and cook for 10 minutes, stirring occasionally.
- Reduce the heat to low and gradually stir in the cheese until melted and smooth.
- Season with salt and pepper to taste.
- Serve the soup hot, garnished with chives.
