Insalata Russa
Insalata Russa, also known as Russian Salad, is a traditional Italian appetizer made with diced boiled vegetables and mayonnaise.
Ingredients - Serves 4
- Parsley - For garnish
- Salt and pepper - To taste
- Mayonnaise - 1/2 cup
- Peas - 1 cup, frozen
- Carrots - 2 medium, peeled and diced
- Potatoes - 2 medium, peeled and diced
Let's Get Started
- Place the diced potatoes and carrots in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes.
- Add the peas to the pot during the last 5 minutes of cooking.
- Drain the vegetables and let them cool completely.
- In a large bowl, combine the cooled vegetables and mayonnaise. Season with salt and pepper.
- Refrigerate the salad for at least 1 hour before serving.
- Garnish with parsley before serving.
