Indian Spiced Seafood Linguine
A fusion of Italian and Indian cuisine, this linguine is tossed with a medley of seafood and a spicy Indian sauce.
Ingredients - Serves 4
- Coriander leaves - For garnish
- Salt - To taste
- Coconut milk - 1 cup
- Tomatoes - 2, chopped
- Chili powder - 1/2 teaspoon
- Coriander - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
- Mixed seafood - 500 grams
- Linguine - 400 grams
Let's Get Started
- Cook the linguine according to the package instructions, then drain and set aside.
- Heat the olive oil in a large pan over medium heat.
- Add the onion, garlic, and ginger and cook until the onion is soft, about 5 minutes.
- Add the turmeric, cumin, coriander, and chili powder and cook for another minute.
- Add the tomatoes and cook until they break down and form a sauce, about 10 minutes.
- Add the seafood and cook until it is cooked through, about 5 minutes.
- Stir in the coconut milk and bring the sauce to a simmer.
- Season with salt to taste.
- Toss the cooked linguine in the sauce until it is well coated.
- Serve the linguine garnished with coriander leaves.
