Saku Sai Moo
Saku Sai Moo is a traditional Thai appetizer. These dumplings are made with a chewy tapioca pearl dough and filled with a savory pork filling.
Ingredients - Serves 4
- Vegetable oil - For frying
- Coriander leaves - 1/4 cup, chopped
- Pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Sugar - 1 teaspoon
- Soy sauce - 1 tablespoon
- Garlic - 2 cloves, minced
- Ground pork - 1 cup
- Water - 2 cups
- Tapioca pearls - 1 cup
Let's Get Started
- Soak the tapioca pearls in water for 30 minutes, then drain.
- In a pan, heat some oil and sauté the garlic until fragrant.
- Add the ground pork, soy sauce, sugar, salt, and pepper. Cook until the pork is fully cooked.
- Add the coriander leaves and mix well. Set aside to cool.
- Take a small amount of the soaked tapioca pearls and flatten it into a disc. Place a spoonful of the pork filling in the center and fold the tapioca over the filling, sealing it completely.
- Heat oil in a deep fryer or large saucepan to 350°F (175°C).
- Fry the dumplings in batches until golden brown, about 3-5 minutes. Drain on paper towels.
- Serve the dumplings warm with a side of sweet chili sauce.
