Homemade Horchata
A refreshing, creamy and sweet Mexican drink made with rice, milk, vanilla, and cinnamon.
Ingredients - Serves 6
- Granulated sugar - 2/3 cup
- Milk - 2 cups
- Vanilla extract - 1/2 teaspoon
- Cinnamon stick - 1
- Water - 5 cups
- Long grain white rice - 1 cup
Let's Get Started
- Rinse the rice under cold water until the water runs clear.
- Combine the rice, 4 cups of water, and the cinnamon stick in a blender. Blend until the rice and cinnamon stick are roughly ground up (1-2 minutes).
- Pour the mixture into a large pitcher and add the remaining cup of water. Let it sit at room temperature for at least 8 hours, or overnight.
- After the mixture has sat for 8 hours, strain it into a bowl through a fine mesh sieve or cheesecloth. Discard the rice and cinnamon stick.
- Stir the milk, vanilla extract, and sugar into the strained liquid.
- Chill the horchata in the fridge, or serve it over ice. Enjoy!
