Spiced Pear Upside Down Cake
A deliciously moist and spiced cake topped with beautifully arranged pears.
Ingredients - Serves 8
- Milk - 1/2 cup
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Granulated sugar - 3/4 cup
- Salt - 1/4 teaspoon
- Ground ginger - 1/2 teaspoon
- Ground cinnamon - 1 teaspoon
- Baking powder - 1 1/2 teaspoons
- All-purpose flour - 1 1/2 cups
- Pears - 2, thinly sliced
- Brown sugar - 3/4 cup
- Unsalted butter - 1/2 cup
Let's Get Started
- Preheat the oven to 350°F. Melt 1/4 cup of the butter and pour it into a 9-inch round cake pan, spreading it to coat the bottom. Sprinkle the brown sugar evenly over the butter.
- Arrange the pear slices on top of the brown sugar.
- In a medium bowl, whisk together the flour, baking powder, cinnamon, ginger, and salt.
- In a large bowl, beat the remaining 1/4 cup butter and the granulated sugar until creamy. Beat in the eggs, one at a time, then beat in the vanilla.
- Add the flour mixture to the butter mixture in three parts, alternating with the milk, beginning and ending with the flour. Spread the batter evenly over the pears.
- Bake for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool in the pan for 10 minutes, then invert it onto a serving plate. Let it cool completely before serving.
