Spiced Pear Upside Down Cake

Ingredients - Serves 8

Let's Get Started

  1. Preheat the oven to 350°F. Melt 1/4 cup of the butter and pour it into a 9-inch round cake pan, spreading it to coat the bottom. Sprinkle the brown sugar evenly over the butter.
  2. Arrange the pear slices on top of the brown sugar.
  3. In a medium bowl, whisk together the flour, baking powder, cinnamon, ginger, and salt.
  4. In a large bowl, beat the remaining 1/4 cup butter and the granulated sugar until creamy. Beat in the eggs, one at a time, then beat in the vanilla.
  5. Add the flour mixture to the butter mixture in three parts, alternating with the milk, beginning and ending with the flour. Spread the batter evenly over the pears.
  6. Bake for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then invert it onto a serving plate. Let it cool completely before serving.
