Hjortefilet Med Skogsbærsaus
This is a traditional Norwegian dish featuring venison fillet with a wild berry sauce.
Ingredients - Serves 4
- Cornstarch - 1 tablespoon
- Beef stock - 1 cup
- Red wine - 1 cup
- Sugar - 2 tablespoons
- Mixed wild berries - 2 cups
- Butter - 2 tablespoons
- Salt and pepper - To taste
- Venison fillet - 800 grams
Let's Get Started
- Season the venison fillet with salt and pepper.
- Heat the butter in a pan over high heat. Add the venison and sear on all sides, then reduce the heat and cook to your desired level of doneness. Remove from the pan and let rest.
- In the same pan, add the wild berries and sugar. Cook over medium heat until the berries release their juices and the sugar is dissolved.
- Add the red wine and beef stock to the pan. Bring to a boil, then reduce the heat and simmer until the sauce is reduced by half.
- Mix the cornstarch with a little water to make a slurry. Stir this into the sauce and cook until thickened.
- Slice the venison and serve with the wild berry sauce.
