Pollo en Salsa Pina Colada
This is a delicious tropical dish where chicken is cooked in a sweet and tangy pineapple and coconut sauce.
Ingredients - Serves 4
- Water - 2 tablespoons
- Cornstarch - 1 tablespoon
- Sugar - 2 tablespoons
- Coconut milk - 1 cup
- Pineapple juice - 1 cup
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Chicken breasts - 4, boneless and skinless
Let's Get Started
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
- Add the pineapple juice, coconut milk, and sugar to the skillet. Stir to combine.
- In a small bowl, mix together the cornstarch and water to create a slurry. Add this to the skillet and stir to combine.
- Return the chicken to the skillet and simmer in the sauce for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
- Serve the chicken with the sauce poured over the top.
