Halibut Chowder
This creamy and flavorful halibut chowder is made with fresh halibut fillets, potatoes, vegetables, and herbs.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Bay leaf - 1
- Fresh thyme - 1 tablespoon, chopped
- Milk - 2 cups
- Chicken broth - 4 cups
- All-purpose flour - 1/4 cup
- Butter - 3 tablespoons
- Garlic - 3 cloves, minced
- Celery - 2 stalks, diced
- Carrots - 2 medium, diced
- Onion - 1 medium, chopped
- Potatoes - 2 large, diced
- Halibut fillets - 1.5 lbs, cut into chunks
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the onion, carrots, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.
- Stir in the flour and cook for 1 minute.
- Gradually whisk in the chicken broth and milk.
- Add the potatoes, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potatoes are cooked through.
- Add the halibut chunks and simmer for an additional 5 minutes, or until the fish is cooked and flakes easily with a fork.
- Remove the bay leaf and stir in the fresh parsley.
- Serve hot and enjoy!
