Hainanese Chicken Rice
Hainanese Chicken Rice is a popular dish in Southeast Asia, particularly in Singapore and Malaysia. It features tender poached chicken served with fragrant rice and a variety of condiments.
Ingredients - Serves 4
- Ginger sauce - For serving
- Chili sauce - For serving
- Coriander leaves - 1/4 cup, chopped
- Cucumber - 1, sliced
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Chicken fat or vegetable oil - 2 tablespoons
- Rice - 2 cups
- Chicken broth - 4 cups
- Garlic - 4 cloves
- Ginger - 3 slices
- Chicken - 1 whole (about 3-4 lbs)
Let's Get Started
- In a large pot, bring water to a boil. Add the chicken, ginger slices, and garlic cloves. Cook for about 30-40 minutes until the chicken is fully cooked.
- Remove the chicken from the pot and place it in a bowl of ice water to cool. Reserve the chicken broth for cooking the rice.
- Rub the chicken skin with chicken fat or vegetable oil. Then, drizzle soy sauce and sesame oil over the chicken. Set aside.
- To cook the rice, heat the chicken fat or vegetable oil in a saucepan. Add the rice and stir-fry for a few minutes until it is well coated with oil.
- Transfer the rice to a rice cooker and add 4 cups of the reserved chicken broth. Cook the rice according to the rice cooker's instructions.
- Once the rice is cooked, fluff it with a fork and let it rest for a few minutes.
- To serve, carve the chicken into serving pieces. Arrange the chicken on a plate with cucumber slices and coriander leaves.
- Serve the Hainanese Chicken Rice with chili sauce and ginger sauce on the side.
