Haddock Chowder
A hearty and comforting chowder made with fresh haddock, potatoes, and a creamy broth.
Ingredients - Serves 4
- Fresh parsley - For garnish
- Salt and pepper - To taste
- Heavy cream - 1 cup
- Chicken broth - 4 cups
- Potatoes - 2 large, diced
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Butter - 2 tablespoons
- Haddock fillets - 1 pound
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.
- Add the haddock to the pot and cook until the fish is opaque and flakes easily with a fork, about 10 minutes.
- Stir in the heavy cream and season with salt and pepper. Cook for an additional 5 minutes, until the chowder is heated through.
- Serve the chowder hot, garnished with fresh parsley.
