Gulaschsuppe
Gulaschsuppe is a traditional Hungarian soup made with tender beef, paprika, and vegetables.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Sour cream - 1/2 cup
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Bay leaf - 1
- Beef broth - 4 cups
- Sweet paprika - 2 tablespoons
- Tomato paste - 2 tablespoons
- Potatoes - 2, peeled and diced
- Carrots - 2, sliced
- Red bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Beef stew meat - 1.5 pounds, cubed
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat.
- Add the beef stew meat and cook until browned on all sides.
- Add the chopped onion and minced garlic. Cook until the onion is translucent.
- Stir in the tomato paste and sweet paprika. Cook for 1 minute.
- Add the diced red bell pepper, sliced carrots, and diced potatoes. Stir to combine.
- Pour in the beef broth and add the bay leaf. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- Remove the bay leaf from the soup.
- Serve the Gulaschsuppe hot, garnished with a dollop of sour cream and chopped fresh parsley.
