Let's Get Started

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the beef stew meat and cook until browned on all sides.
  3. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  4. Stir in the tomato paste and sweet paprika. Cook for 1 minute.
  5. Add the diced red bell pepper, sliced carrots, and diced potatoes. Stir to combine.
  6. Pour in the beef broth and add the bay leaf. Season with salt and pepper to taste.
  7. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  8. Remove the bay leaf from the soup.
  9. Serve the Gulaschsuppe hot, garnished with a dollop of sour cream and chopped fresh parsley.
