Green Githeri
Green Githeri is a traditional Kenyan dish made with a combination of green vegetables and beans.
Ingredients - Serves 6
- Cooking oil - 2 tablespoons
- Vegetable broth - 2 cups
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Spinach - 2 cups, chopped
- Tomatoes - 2 medium, chopped
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- White beans - 1 cup, cooked
- Corn kernels - 1 cup
- Green beans - 2 cups, chopped
Let's Get Started
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the chopped tomatoes and cook until they soften.
- Add the green beans, corn kernels, white beans, and spinach. Stir well to combine.
- Season with salt and black pepper. Mix well.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the vegetables are tender.
