Ingredients - Serves 6

Let's Get Started

  1. In a large pot, heat some oil over medium heat.
  2. Add the beef stew meat and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the onions and garlic. Cook until the onions are translucent.
  4. Add the tomato paste, paprika, and caraway seeds. Stir well to coat the onions.
  5. Return the beef stew meat to the pot and pour in the beef broth. Bring to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Add the cubed potatoes and chopped bell peppers to the pot. Cook for an additional 30 minutes, or until the potatoes are cooked through.
  8. Season with salt and pepper to taste.
  9. Serve the goulash hot, garnished with a dollop of sour cream and chopped fresh parsley.
