Goulash
Goulash is a traditional Hungarian stew made with tender beef, onions, and paprika.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Sour cream - 1/2 cup
- Salt and pepper - To taste
- Bell peppers - 2, chopped
- Potatoes - 4 medium, peeled and cubed
- Beef broth - 4 cups
- Caraway seeds - 1 teaspoon
- Paprika - 2 tablespoons
- Tomato paste - 2 tablespoons
- Garlic - 4 cloves, minced
- Onions - 2 large, chopped
- Beef stew meat - 2 pounds, cubed
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the beef stew meat and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the onions and garlic. Cook until the onions are translucent.
- Add the tomato paste, paprika, and caraway seeds. Stir well to coat the onions.
- Return the beef stew meat to the pot and pour in the beef broth. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the beef is tender.
- Add the cubed potatoes and chopped bell peppers to the pot. Cook for an additional 30 minutes, or until the potatoes are cooked through.
- Season with salt and pepper to taste.
- Serve the goulash hot, garnished with a dollop of sour cream and chopped fresh parsley.
