  1. In a small bowl, combine the warm water and sugar. Stir until the sugar is dissolved, then sprinkle the yeast over the top. Let sit for 5 minutes, or until the yeast is foamy.
  2. In a large bowl, combine the gluten-free flour, xanthan gum, and salt.
  3. In another bowl, whisk together the eggs, oil, and vinegar.
  4. Add the yeast mixture and the egg mixture to the flour mixture. Stir until well combined.
  5. Cover the bowl with a clean kitchen towel and let rise in a warm place for 1 hour, or until doubled in size.
  6. Preheat your oven to 375°F (190°C). Grease a loaf pan.
  7. Pour the dough into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 45 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
