Pickled Onions
These quick pickled onions are a delicious condiment to brighten up any dish. They are easy to make and can be stored in the fridge for up to two weeks.
Ingredients - Serves 8
- Salt - 1.5 teaspoons
- Sugar - 1 tablespoon
- Water - 1 cup
- Apple cider vinegar - 1 cup
- Red onion - 1 large, thinly sliced

- Slice the red onion as thin as you can.
- In a saucepan, combine the apple cider vinegar, water, sugar, and salt. Bring to a boil over medium heat.
- Add the sliced onions to the boiling mixture. Stir to ensure all the onions are in the liquid and then remove from heat.
- Let the onions cool in the liquid for at least 30 minutes. For best results, let them cool and then store in the fridge for at least an hour before using.
- Store the pickled onions in the fridge in a jar or airtight container with the pickling liquid. They will keep for up to two weeks.
