Let's Get Started

  1. In a large pot, combine the ginger, sugar, and half of the water. Bring to a boil over medium heat, stirring until the sugar dissolves.
  2. Remove the pot from the heat and let the mixture cool to room temperature.
  3. Once cooled, strain the mixture into a large container, discarding the ginger.
  4. Stir in the lemon juice, yeast, and the remaining water.
  5. Cover the container and let it sit at room temperature for 24 hours.
  6. After 24 hours, strain the mixture again and transfer it to the refrigerator. Let it chill for at least 2 hours before serving.
  7. Serve your homemade ginger beer over ice, garnished with a slice of lemon or lime if desired.
