Gbegiri Soup
Gbegiri soup is a traditional Nigerian soup made with beans and served with other Nigerian dishes.
Ingredients - Serves 6
- Water - 6 cups
- Salt - To taste
- Seasoning cubes - 2 cubes
- Dry fish - 2 medium-sized pieces
- Stockfish - 1 medium-sized piece
- Crayfish - 2 tablespoons, ground
- Pepper - 2 habanero peppers, chopped
- Onion - 1 medium, chopped
- Palm oil - 1/4 cup
- Black-eyed beans - 2 cups
Let's Get Started
- Wash the black-eyed beans thoroughly and place in a pot with water. Cook until soft and tender.
- Drain the cooked beans and blend to a smooth paste using a blender or food processor.
- In a separate pot, heat the palm oil over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the chopped pepper and sauté for another 2 minutes.
- Add the blended beans to the pot and stir well to combine with the palm oil, onions, and pepper.
- Add the crayfish, stockfish, dry fish, seasoning cubes, and salt. Stir well.
- Pour in the water and bring the soup to a boil.
- Reduce the heat to low and simmer for about 45 minutes, stirring occasionally.
- Taste and adjust the seasoning if needed.
- Serve hot with your choice of Nigerian dishes, such as pounded yam, eba, or rice.
