Gató D'ametlla

Ingredients - Serves 8
- Powdered sugar - For dusting
- Lemon zest - 1 tablespoon
- Eggs - 4 large
- Sugar - 200 grams
- Almonds - 200 grams, ground

- Preheat the oven to 180°C (350°F) and grease a round cake tin.
- In a bowl, mix together the ground almonds and sugar.
- In another bowl, beat the eggs until they are fluffy and have doubled in size.
- Gradually add the almond and sugar mixture to the beaten eggs, mixing well after each addition.
- Add the lemon zest and mix until well combined.
- Pour the mixture into the prepared cake tin and smooth the top with a spatula.
- Bake in the preheated oven for 40 minutes, or until a skewer inserted into the center of the cake comes out clean.
- Allow the cake to cool in the tin for 10 minutes, then turn it out onto a wire rack to cool completely.
- Before serving, dust the top of the cake with powdered sugar.
