Piononos de Santa Fe
Piononos de Santa Fe is a traditional Spanish dessert named after Pope Pius IX, or 'Pio Nono'. It's a sweet pastry roll filled with cream and topped with powdered sugar.
Ingredients - Serves 8
- Powdered sugar - 1/2 cup
- Whipping cream - 2 cups
- Vanilla extract - 1 teaspoon
- Flour - 1 cup
- Sugar - 1 cup
- Eggs - 4
Let's Get Started
- Preheat the oven to 375°F (190°C) and line a jelly roll pan with parchment paper.
- In a large bowl, beat the eggs and sugar together until light and fluffy.
- Add the flour and vanilla extract, and mix until well combined.
- Pour the batter into the prepared pan and spread it out evenly.
- Bake for 10-15 minutes, or until the cake is golden and springs back when lightly touched.
- While the cake is baking, whip the cream until it forms stiff peaks.
- Once the cake is done, let it cool for a few minutes, then spread the whipped cream over the top.
- Roll the cake up from the short end, then dust with powdered sugar.
- Slice and serve the piononos chilled.
