  1. In a large saucepan, combine the water, butter, sugar, and salt. Bring to a boil over medium heat.
  2. Once the mixture is boiling, add the flour all at once and stir vigorously with a wooden spoon until the mixture pulls away from the sides of the pan and forms a ball.
  3. Remove from heat and let cool for a few minutes. Then, add the eggs one at a time, stirring well after each addition. Stir in the vanilla extract.
  4. Heat oil in a deep fryer or large pot to 375°F (190°C).
  5. Drop spoonfuls of the dough into the hot oil and fry until golden brown, about 5 minutes. Drain on paper towels.
  6. Once the zeppole are cool, cut a slit in each one and fill with a spoonful of ricotta cheese.
  7. Dust with powdered sugar before serving.
