Raspekake
Raspekake is a traditional Norwegian dessert that is made with layers of almond cake, raspberry jam, and whipped cream.
Ingredients - Serves 8
- Powdered sugar - 1/4 cup
- Heavy cream - 2 cups
- Raspberry jam - 1 cup
- Vanilla extract - 1 teaspoon
- Eggs - 4
- Sugar - 1 cup
- Almond flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F and grease a round cake pan.
- In a large bowl, combine the almond flour and sugar.
- In another bowl, beat the eggs until they are fluffy and then add the vanilla extract.
- Gradually add the egg mixture to the almond flour mixture, stirring until well combined.
- Pour the batter into the prepared cake pan and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely.
- Once the cake is cool, spread the raspberry jam over the top.
- In a large bowl, beat the heavy cream until soft peaks form. Gradually add the powdered sugar, continuing to beat until stiff peaks form.
- Spread the whipped cream over the raspberry jam.
- Refrigerate the cake for at least 2 hours before serving.
