Ingredients - Serves 8

Let's Get Started

  1. Preheat the oven to 350°F and grease a round cake pan.
  2. In a large bowl, combine the almond flour and sugar.
  3. In another bowl, beat the eggs until they are fluffy and then add the vanilla extract.
  4. Gradually add the egg mixture to the almond flour mixture, stirring until well combined.
  5. Pour the batter into the prepared cake pan and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely.
  7. Once the cake is cool, spread the raspberry jam over the top.
  8. In a large bowl, beat the heavy cream until soft peaks form. Gradually add the powdered sugar, continuing to beat until stiff peaks form.
  9. Spread the whipped cream over the raspberry jam.
  10. Refrigerate the cake for at least 2 hours before serving.
