  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the ground almonds and sugar.
  3. In a separate bowl, beat the egg whites until stiff peaks form.
  4. Gently fold the egg whites and almond extract into the almond and sugar mixture.
  5. Using a spoon, drop dollops of the mixture onto the prepared baking sheet.
  6. Bake for about 15 minutes, or until the cookies are lightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
  8. Once cooled, dust the cookies with powdered sugar before serving.
