Amygdalota
Amygdalota is a type of Greek almond cookie. They are a gluten-free sweet treat and are a traditional recipe from the Cycladic islands.

- Powdered sugar - For dusting
- Almond extract - 1 teaspoon
- Egg whites - 2
- Sugar - 1 cup
- Almonds - 2 cups, blanched and finely ground

- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine the ground almonds and sugar.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites and almond extract into the almond and sugar mixture.
- Using a spoon, drop dollops of the mixture onto the prepared baking sheet.
- Bake for about 15 minutes, or until the cookies are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
- Once cooled, dust the cookies with powdered sugar before serving.
