Brazo de Reina
Brazo de Reina is a traditional Spanish dessert, a sponge cake roll filled with a creamy custard filling.
Ingredients - Serves 8
- Powdered sugar - For dusting
- Custard filling - 1 cup
- Milk - 1/2 cup
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- Flour - 1 cup
- Vanilla extract - 1 teaspoon
- Sugar - 1 cup
- Eggs - 4
Let's Get Started
- Preheat the oven to 350°F and line a jelly roll pan with parchment paper.
- In a large bowl, beat the eggs until fluffy. Gradually add the sugar and vanilla, beating until well combined.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add to the egg mixture, alternating with the milk.
- Pour the batter into the prepared pan and spread evenly. Bake for 15 minutes, or until a toothpick inserted into the center comes out clean.
- Immediately invert the cake onto a clean kitchen towel dusted with powdered sugar. Roll up the cake with the towel, starting at a short end. Let cool completely.
- Unroll the cake, spread with the custard filling, then re-roll. Dust with additional powdered sugar before serving.
