Garlic Roasted Pheasant with Apple Gravy

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 375°F.
  2. Rub the pheasant with the minced garlic, rosemary, thyme, salt, and pepper.
  3. Heat the olive oil in a roasting pan over medium heat. Add the pheasant and brown on all sides.
  4. Place the roasting pan in the oven and roast the pheasant for about 1 hour, or until the juices run clear.
  5. While the pheasant is roasting, make the apple gravy. In a saucepan, combine the apples, onion, chicken broth, and apple cider. Bring to a boil, then reduce the heat and simmer until the apples are soft.
  6. In a separate saucepan, melt the butter. Stir in the flour and cook for 1 minute. Gradually whisk in the apple mixture and cook until the gravy is thickened.
  7. Remove the pheasant from the oven and let it rest for a few minutes before carving.
  8. Serve the pheasant with the apple gravy.
