Garlic Drunken Noodles
A spicy, savory Thai dish made with wide rice noodles, fresh vegetables, and a flavorful sauce.
Ingredients - Serves 4
- Red pepper flakes - 1 teaspoon
- Thai basil leaves - 1 cup
- Sugar - 1 tablespoon
- Fish sauce - 1 tablespoon
- Oyster sauce - 2 tablespoons
- Soy sauce - 2 tablespoons
- Eggs - 2
- Green onions - 3, chopped
- Red bell pepper - 1, thinly sliced
- Garlic - 4 cloves, minced
- Vegetable oil - 2 tablespoons
- Wide rice noodles - 8 ounces
Let's Get Started
- Cook the rice noodles according to the package instructions. Drain and set aside.
- Heat the oil in a large pan over medium heat. Add the garlic and cook until fragrant.
- Add the bell pepper and green onions to the pan and cook until softened.
- Push the vegetables to one side of the pan and crack the eggs into the other side. Scramble the eggs and cook until set.
- Add the cooked noodles to the pan along with the soy sauce, oyster sauce, fish sauce, and sugar. Stir well to combine.
- Stir in the Thai basil leaves and red pepper flakes. Cook for another minute, until the basil is wilted.
- Serve the noodles hot, garnished with extra basil leaves and red pepper flakes if desired.
