Furofuki Daikon

Ingredients - Serves 4
- Green onions - 2, chopped for garnish
- Mirin - 1 tablespoon
- White miso - 2 tablespoons
- Sugar - 1 tablespoon
- Soy sauce - 1 tablespoon
- Sake - 2 tablespoons
- Water - Enough to cover the daikon
- Daikon radish - 1 large
Let's Get Started
- Peel the daikon radish and cut into thick rounds.
- Place the daikon in a pot and add enough water to cover. Bring to a boil, then reduce the heat and simmer until the daikon is tender.
- In a small bowl, mix together the sake, soy sauce, sugar, miso, and mirin to make the sauce.
- Once the daikon is tender, drain the water and return the daikon to the pot. Add the sauce and stir to coat the daikon.
- Simmer for a few more minutes until the sauce is thickened.
- Serve the daikon warm, garnished with chopped green onions.
