Fujian Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the shrimp, scallops, and chicken and stir-fry until cooked through. Remove from the wok and set aside.
  2. In the same wok, add the remaining oil. Add the garlic and onion and stir-fry until fragrant.
  3. Add the carrot and peas and stir-fry for another 2 minutes.
  4. Push the vegetables to one side of the wok and pour the eggs into the other side. Scramble the eggs and mix with the vegetables.
  5. Add the cooked rice to the wok and stir-fry for another 2 minutes.
  6. Add the cooked seafood and chicken back to the wok and mix well.
  7. In a small bowl, mix the soy sauce, chicken broth, and cornstarch to make a sauce. Pour the sauce over the fried rice and stir well to combine.
  8. Cook for another 2 minutes, until the sauce has thickened. Serve hot.
