Fujian Fried Rice
Fujian Fried Rice is a popular Chinese dish where the rice is cooked with seafood and served with a thick gravy.
Ingredients - Serves 4
- Cornstarch - 1 tablespoon
- Chicken broth - 1 cup
- Soy sauce - 2 tablespoons
- Eggs - 2
- Green peas - 1/2 cup
- Carrot - 1, diced
- Onion - 1, diced
- Garlic - 2 cloves, minced
- Vegetable oil - 2 tablespoons
- Chicken breast - 1 cup, diced
- Scallops - 1 cup
- Shrimp - 1 cup, peeled and deveined
- Cooked rice - 4 cups
Let's Get Started
- Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the shrimp, scallops, and chicken and stir-fry until cooked through. Remove from the wok and set aside.
- In the same wok, add the remaining oil. Add the garlic and onion and stir-fry until fragrant.
- Add the carrot and peas and stir-fry for another 2 minutes.
- Push the vegetables to one side of the wok and pour the eggs into the other side. Scramble the eggs and mix with the vegetables.
- Add the cooked rice to the wok and stir-fry for another 2 minutes.
- Add the cooked seafood and chicken back to the wok and mix well.
- In a small bowl, mix the soy sauce, chicken broth, and cornstarch to make a sauce. Pour the sauce over the fried rice and stir well to combine.
- Cook for another 2 minutes, until the sauce has thickened. Serve hot.
