Let's Get Started

  1. Rinse the pinto beans and soak them overnight in a large bowl of water.
  2. In a large pot, cook the bacon over medium heat until it's crispy. Remove the bacon and set it aside, but leave the grease in the pot.
  3. Add the onion, garlic, and jalapenos to the pot and cook until the onions are translucent.
  4. Drain the beans and add them to the pot, along with the tomatoes and enough water to cover the beans by about 2 inches.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 2 hours, or until the beans are tender.
  6. Stir in the cooked bacon and cilantro, and season with salt to taste. Let the beans simmer for another 15 minutes before serving.
