Frijoles Charros
Frijoles Charros, also known as Mexican Cowboy Beans, is a hearty, flavorful dish made with pinto beans, bacon, and various seasonings. It's a perfect side dish for any Mexican meal or a great main course on its own.
Ingredients - Serves 6
- Salt - To taste
- Cilantro - 1/2 cup, chopped
- Tomatoes - 2, chopped
- Jalapeno peppers - 2, seeded and chopped
- Garlic - 4 cloves, minced
- Onion - 1, chopped
- Bacon - 1/2 pound, chopped
- Pinto beans - 1 pound, dried
Let's Get Started
- Rinse the pinto beans and soak them overnight in a large bowl of water.
- In a large pot, cook the bacon over medium heat until it's crispy. Remove the bacon and set it aside, but leave the grease in the pot.
- Add the onion, garlic, and jalapenos to the pot and cook until the onions are translucent.
- Drain the beans and add them to the pot, along with the tomatoes and enough water to cover the beans by about 2 inches.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 2 hours, or until the beans are tender.
- Stir in the cooked bacon and cilantro, and season with salt to taste. Let the beans simmer for another 15 minutes before serving.
