Ingredients - Serves 4

Let's Get Started

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the diced onion, carrots, and peas. Cook until the vegetables are tender, about 5 minutes.
  3. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
  4. Add the cooked rice to the skillet and stir to combine with the vegetables and eggs.
