Focaccia Alla Messinese
Focaccia alla Messinese is a traditional Sicilian dish, a soft and thick flat bread topped with tomatoes, onions, and oregano.
Ingredients - Serves 8
- Dried oregano - 1 tablespoon
- Red onions - 2, thinly sliced
- Cherry tomatoes - 200 grams
- Extra virgin olive oil - 50 ml
- Fresh yeast - 15 grams
- Sugar - 10 grams
- Salt - 10 grams
- Water - 350 ml
- Bread flour - 500 grams
Let's Get Started
- In a large bowl, combine the flour, water, salt, sugar, and yeast. Knead until a smooth dough forms.
- Cover the dough and let it rise in a warm place for about 2 hours, or until it has doubled in size.
- Preheat the oven to 220°C (430°F).
- Grease a baking sheet with some of the olive oil. Place the dough on the sheet and spread it out with your hands.
- Press your fingers into the dough to create dimples. Drizzle the remaining olive oil over the dough.
- Top the dough with the cherry tomatoes, onions, and oregano.
- Bake for about 20 minutes, or until the focaccia is golden brown.
- Let the focaccia cool slightly before cutting it into squares and serving.
