Curtido
Curtido is a traditional Salvadoran cabbage slaw that is tangy, crunchy, and full of flavor.
Ingredients - Serves 6
- Red pepper flakes - 1/2 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Sugar - 2 tablespoons
- Water - 1/4 cup
- Apple cider vinegar - 1/4 cup
- White onion - 1 small, thinly sliced
- Carrots - 2 medium, grated
- Green cabbage - 1 small head, thinly sliced
Let's Get Started
- In a large bowl, combine the sliced cabbage, grated carrots, and sliced onion.
- In a small saucepan, heat the apple cider vinegar, water, sugar, salt, dried oregano, and red pepper flakes over medium heat. Stir until the sugar and salt are dissolved.
- Pour the vinegar mixture over the cabbage mixture and toss to combine.
- Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
- Serve chilled as a side dish or topping for tacos, pupusas, or grilled meats.
