Flammekueche, also known as Tarte Flambée, is a traditional Alsatian dish. It's a thin crust pizza topped with crème fraîche, onions, and lardons.

  1. Preheat your oven to its highest setting, usually around 500°F (260°C). If you have a pizza stone, place it in the oven to heat.
  2. Roll out the pizza dough as thin as you can, aiming for a rectangle shape if possible.
  3. Spread the crème fraîche evenly over the dough, leaving a small border around the edges.
  4. Scatter the sliced onions and lardons over the crème fraîche.
  5. Season with salt, pepper, and a pinch of nutmeg.
  6. Transfer the Flammekueche to the preheated oven (place on the pizza stone if using) and bake for about 10-15 minutes, or until the crust is crispy and the toppings are lightly browned.
  7. Remove from the oven and cut into squares or strips before serving.
