Marubini in Brodo

- Celery - 2 stalks, chopped
- Onions - 2, chopped
- Carrots - 2, chopped
- Chicken bones - 1 pound
- For the broth -
- Nutmeg - 1/4 teaspoon
- Parmesan cheese - 1/2 cup, grated
- Ground beef - 1/2 cup
- Ground pork - 1/2 cup
- For the filling -
- Salt - 1 teaspoon
- Eggs - 2
- Flour - 2 cups
- For the pasta -
Let's Get Started
- To make the pasta, combine the flour, eggs, and salt in a bowl. Knead until a dough forms, then let it rest for 30 minutes.
- For the filling, mix together the ground pork, ground beef, Parmesan cheese, and nutmeg. Set aside.
- Roll out the pasta dough and cut out circles. Place a small amount of filling in the center of each circle, then fold in half and seal the edges.
- To make the broth, combine the chicken bones, carrots, onions, and celery in a large pot. Cover with water and bring to a boil. Reduce the heat and simmer for 2 hours.
- Strain the broth and return it to the pot. Season with salt and pepper.
- Bring the broth to a boil and add the pasta parcels. Cook until they rise to the surface, about 5 minutes.
- Serve the Marubini in Brodo hot, garnished with extra Parmesan cheese if desired.
