Marubini in Brodo

Ingredients - Serves 6

Let's Get Started

  1. To make the pasta, combine the flour, eggs, and salt in a bowl. Knead until a dough forms, then let it rest for 30 minutes.
  2. For the filling, mix together the ground pork, ground beef, Parmesan cheese, and nutmeg. Set aside.
  3. Roll out the pasta dough and cut out circles. Place a small amount of filling in the center of each circle, then fold in half and seal the edges.
  4. To make the broth, combine the chicken bones, carrots, onions, and celery in a large pot. Cover with water and bring to a boil. Reduce the heat and simmer for 2 hours.
  5. Strain the broth and return it to the pot. Season with salt and pepper.
  6. Bring the broth to a boil and add the pasta parcels. Cook until they rise to the surface, about 5 minutes.
  7. Serve the Marubini in Brodo hot, garnished with extra Parmesan cheese if desired.
