Cream of Parsnip Soup
A creamy, comforting soup made from parsnips and a blend of spices. Perfect for a cold day.
Ingredients - Serves 4
- Nutmeg - 1/2 teaspoon
- Salt and pepper - To taste
- Heavy cream - 1 cup
- Chicken broth - 4 cups
- Parsnips - 4 large, peeled and chopped
- Garlic - 2 cloves, minced
- Onions - 1 large, chopped
- Butter - 2 tablespoons
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onions and garlic and cook until the onions are soft, about 5 minutes.
- Add the parsnips and cook for another 5 minutes.
- Add the chicken broth, bring to a boil, then reduce the heat and simmer until the parsnips are soft, about 30 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream, salt, pepper, and nutmeg.
- Heat the soup for another 5 minutes, then serve.
