Cream of Parsnip Soup

Ingredients - Serves 4

Let's Get Started

  1. Melt the butter in a large pot over medium heat.
  2. Add the onions and garlic and cook until the onions are soft, about 5 minutes.
  3. Add the parsnips and cook for another 5 minutes.
  4. Add the chicken broth, bring to a boil, then reduce the heat and simmer until the parsnips are soft, about 30 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in the heavy cream, salt, pepper, and nutmeg.
  7. Heat the soup for another 5 minutes, then serve.
