  1. Pound the pork loin slices until they are thin and flat.
  2. Place two slices of jamón serrano on each piece of pork loin.
  3. Roll up the pork loin slices tightly, securing with toothpicks if necessary.
  4. Beat the eggs in a shallow dish.
  5. Place the breadcrumbs in another shallow dish.
  6. Dip each roll in the beaten egg, then coat in breadcrumbs.
  7. Heat the olive oil in a deep frying pan over medium heat.
  8. Fry the rolls until they are golden brown on all sides, about 5 minutes.
  9. Drain on paper towels and season with salt before serving.
