Flaki
Flaki is a traditional Polish tripe soup made with beef tripe, vegetables, and spices.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Sour cream - 1/2 cup
- Salt and pepper - To taste
- Marjoram - 1 teaspoon
- Allspice berries - 5
- Bay leaves - 2
- Garlic cloves - 3, minced
- Celery stalks - 2, diced
- Carrots - 2 medium, diced
- Onion - 1 large, chopped
- Beef bones - 1 pound
- Beef tripe - 1.5 pounds, cleaned and cut into small pieces
Let's Get Started
- In a large pot, bring water to a boil. Add the beef tripe and bones, and cook for 10 minutes. Drain and rinse the tripe and bones.
- In the same pot, add fresh water, tripe, bones, onion, carrots, celery, garlic, bay leaves, allspice berries, marjoram, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 2-3 hours, until the tripe is tender.
- Remove the bones from the soup and discard. Adjust the seasoning with salt and pepper if needed.
- Serve the flaki hot, garnished with a dollop of sour cream and chopped parsley.
