Fish Curry
This flavorful fish curry is made with a blend of spices, coconut milk, and tender fish fillets.
Ingredients - Serves 4
- Cooking oil - 2 tablespoons
- Fresh cilantro - For garnish
- Salt - To taste
- Red chili powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1 teaspoon
- Curry powder - 2 tablespoons
- Coconut milk - 1 can (400ml)
- Tomatoes - 2 medium, chopped
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 large, finely chopped
- Fish fillets - 500 grams
Let's Get Started
- Heat the cooking oil in a large pan over medium heat.
- Add the chopped onion and cook until golden brown, about 5 minutes.
- Add the minced garlic and grated ginger. Cook for another 2 minutes.
- Add the chopped tomatoes and cook until they soften, about 5 minutes.
- In a small bowl, mix together the curry powder, turmeric powder, cumin powder, coriander powder, red chili powder, and salt.
- Add the spice mixture to the pan and cook for 2 minutes, stirring constantly.
- Pour in the coconut milk and bring to a simmer.
- Gently add the fish fillets to the pan, making sure they are submerged in the curry sauce.
- Cover the pan and let the fish cook for about 10-15 minutes, or until cooked through and flaky.
- Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
