Fish Chowder with Cod
This creamy and flavorful fish chowder is made with fresh cod, potatoes, and vegetables.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Salt and pepper - To taste
- Heavy cream - 1 cup
- Cod fillets - 1.5 lbs, cut into chunks
- Thyme - 1 teaspoon
- Bay leaf - 1
- Fish stock - 4 cups
- Potatoes - 3 medium, peeled and diced
- Carrot - 2 medium, diced
- Celery - 2 stalks, diced
- Onion - 1 medium, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, celery, and carrot. Cook until the vegetables are softened, about 5 minutes.
- Add the diced potatoes, fish stock, bay leaf, and thyme. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potatoes are tender.
- Add the cod chunks to the pot and cook for an additional 5 minutes, or until the fish is cooked through and flakes easily with a fork.
- Stir in the heavy cream and season with salt and pepper to taste. Cook for another 5 minutes.
- Remove the bay leaf from the chowder.
- Serve the fish chowder hot, garnished with fresh parsley.
