Fish Chowder with Cod

Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, celery, and carrot. Cook until the vegetables are softened, about 5 minutes.
  3. Add the diced potatoes, fish stock, bay leaf, and thyme. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potatoes are tender.
  4. Add the cod chunks to the pot and cook for an additional 5 minutes, or until the fish is cooked through and flakes easily with a fork.
  5. Stir in the heavy cream and season with salt and pepper to taste. Cook for another 5 minutes.
  6. Remove the bay leaf from the chowder.
  7. Serve the fish chowder hot, garnished with fresh parsley.
