Cashew and Tofu Stir Fry

Ingredients - Serves 4

Let's Get Started

  1. Heat the oil in a large pan over medium heat.
  2. Add the tofu and cook until golden brown on all sides, about 10 minutes. Remove from the pan and set aside.
  3. In the same pan, add the garlic and ginger and cook until fragrant, about 1 minute.
  4. Add the mixed vegetables and cook until tender, about 5 minutes.
  5. In a small bowl, mix together the soy sauce and honey. Pour the sauce over the vegetables in the pan and stir to combine.
  6. Add the tofu and cashews to the pan and stir to coat with the sauce.
  7. Cook for another 2-3 minutes, until everything is heated through.
  8. Serve the stir fry topped with sliced green onions and sesame seeds.
