Cashew and Tofu Stir Fry
A delicious and healthy stir fry dish with cashews, tofu, and vegetables. Perfect for a quick weeknight dinner.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon
- Green onions - 2, sliced
- Mixed vegetables - 2 cups (like bell peppers, broccoli, carrots)
- Honey - 1 tablespoon
- Soy sauce - 1/4 cup
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Vegetable oil - 2 tablespoons
- Cashews - 1 cup, roasted
- Tofu - 1 block, pressed and cubed
Let's Get Started
- Heat the oil in a large pan over medium heat.
- Add the tofu and cook until golden brown on all sides, about 10 minutes. Remove from the pan and set aside.
- In the same pan, add the garlic and ginger and cook until fragrant, about 1 minute.
- Add the mixed vegetables and cook until tender, about 5 minutes.
- In a small bowl, mix together the soy sauce and honey. Pour the sauce over the vegetables in the pan and stir to combine.
- Add the tofu and cashews to the pan and stir to coat with the sauce.
- Cook for another 2-3 minutes, until everything is heated through.
- Serve the stir fry topped with sliced green onions and sesame seeds.
