Vegetable Stir Fry with Brown Rice

Ingredients - Serves 4

Let's Get Started

  1. In a saucepan, bring the water to a boil. Add the brown rice, reduce the heat to low, cover, and cook for 45 minutes, or until the rice is tender and the water is absorbed.
  2. While the rice is cooking, heat the olive oil in a large skillet or wok over medium-high heat.
  3. Add the mixed vegetables and garlic and stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
  4. Stir in the soy sauce, sesame oil, salt, and pepper.
  5. Serve the vegetable stir-fry over the cooked brown rice.
