Vegetable Stir Fry with Brown Rice
A healthy and delicious stir-fry made with a variety of vegetables and served with brown rice.
Ingredients - Serves 4
- Salt and pepper - To taste
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Mixed vegetables - 4 cups, chopped (such as bell peppers, broccoli, carrots, and snow peas)
- Olive oil - 2 tablespoons
- Water - 2 cups
- Brown rice - 1 cup
Let's Get Started
- In a saucepan, bring the water to a boil. Add the brown rice, reduce the heat to low, cover, and cook for 45 minutes, or until the rice is tender and the water is absorbed.
- While the rice is cooking, heat the olive oil in a large skillet or wok over medium-high heat.
- Add the mixed vegetables and garlic and stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
- Stir in the soy sauce, sesame oil, salt, and pepper.
- Serve the vegetable stir-fry over the cooked brown rice.
