Steamed Shanghai Vegetable Rice
A healthy and delicious dish, Steamed Shanghai Vegetable Rice is a perfect blend of rice, vegetables, and Asian flavors.
Ingredients - Serves 4
- Salt and pepper - To taste
- Green onions - 2, chopped
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Mixed vegetables - 2 cups, chopped
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Water - 3 cups
- Jasmine rice - 2 cups
Let's Get Started
- Rinse the jasmine rice under cold water until the water runs clear.
- In a large pot, bring the water to a boil. Add the rice, reduce the heat to low, cover, and cook for 15 minutes.
- While the rice is cooking, heat the sesame oil in a large skillet over medium heat.
- Add the garlic and ginger and cook until fragrant, about 1 minute.
- Add the mixed vegetables and cook until tender, about 5 minutes.
- Stir in the soy sauce and cook for another 2 minutes.
- When the rice is done, fluff it with a fork and add it to the skillet. Stir well to combine.
- Season with salt and pepper to taste and garnish with the chopped green onions before serving.
