Steamed Shanghai Vegetable Rice

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a large pot, bring the water to a boil. Add the rice, reduce the heat to low, cover, and cook for 15 minutes.
  3. While the rice is cooking, heat the sesame oil in a large skillet over medium heat.
  4. Add the garlic and ginger and cook until fragrant, about 1 minute.
  5. Add the mixed vegetables and cook until tender, about 5 minutes.
  6. Stir in the soy sauce and cook for another 2 minutes.
  7. When the rice is done, fluff it with a fork and add it to the skillet. Stir well to combine.
  8. Season with salt and pepper to taste and garnish with the chopped green onions before serving.
