Tempeh Stir Fry with Peanut Sauce
This is a delicious and hearty vegan stir-fry featuring tempeh and a rich peanut sauce.
Ingredients - Serves 4
- Crushed red pepper flakes - 1/4 teaspoon
- Water - 1/4 cup
- Lime juice - 1 tablespoon
- Maple syrup - 1 tablespoon
- Soy sauce - 2 tablespoons
- Peanut butter - 1/4 cup
- Garlic - 2 cloves, minced
- Mixed vegetables - 4 cups, chopped
- Vegetable oil - 2 tablespoons
- Tempeh - 8 ounces, cubed
Let's Get Started
- Heat the oil in a large skillet over medium heat.
- Add the tempeh and cook until browned on all sides, about 5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the mixed vegetables and garlic. Cook until the vegetables are tender, about 5 minutes.
- In a small bowl, whisk together the peanut butter, soy sauce, maple syrup, lime juice, water, and red pepper flakes.
- Add the tempeh back to the skillet with the vegetables. Pour the peanut sauce over the top and stir to combine.
- Cook for another 2-3 minutes, until everything is heated through.
- Serve the stir-fry over rice or noodles, if desired.
