Tempeh Stir Fry with Peanut Sauce

Ingredients - Serves 4

Let's Get Started

  1. Heat the oil in a large skillet over medium heat.
  2. Add the tempeh and cook until browned on all sides, about 5 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the mixed vegetables and garlic. Cook until the vegetables are tender, about 5 minutes.
  4. In a small bowl, whisk together the peanut butter, soy sauce, maple syrup, lime juice, water, and red pepper flakes.
  5. Add the tempeh back to the skillet with the vegetables. Pour the peanut sauce over the top and stir to combine.
  6. Cook for another 2-3 minutes, until everything is heated through.
  7. Serve the stir-fry over rice or noodles, if desired.
